Kasthuri Manjal is not a cooking turmeric, and the way it is dried is most of the difference.
Laid out on a yard in direct light, a root is dry in three days. It is also several shades paler, and the aromatic oils that give this variety its name have largely left with the water. What is left grinds beautifully and does very little.
Racked under cover with the air moving, the same root takes between nine and twelve days. It holds its colour, it still smells like itself, and the powder that comes off the stone afterwards behaves differently on skin — it goes on warm rather than dusty.
Because it is eleven days of covered floor space for the same weight of powder. It is the single most expensive decision in how this is made, and it is the one that cannot be worked around.
